Food as Medicine

We didn’t think this up ourselves…the principle “Let your food be your medicine and your medicine your food”  has been credited to Hippocrates, (400 BC).  We know there is an increased awareness of the role lifestyle and nutrition play in both disease prevention and disease management.  This class offers students an introduction into some of the ways diet affects our health, and can prevent or modify a number of diseases, such as diabetes, high cholesterol, and high blood pressure.  Students will explore how to shop for and prepare healthy meals using whole foods, learn about food safety and cooking skills, and have an introduction into therapeutic diets used in healthcare settings.  This class is taught by Chef Donna Raini and a registered nurse using the Lincoln City Culinary Center with its state of the art cooking environment.
